Liana “Lee” Settels Lessard
Liana has been passionate about food ever since she was a child. It began as a love affair between a child and her pumpernickel bagel; true love. At an early age, she’d help her mom, Claudia in the kitchen, learning and experimenting with sweet and savoury dishes.
Her first job was at 13 at a local farm, where she learned about the origin of many ingredients and experienced getting down and dirty with gardening, another passion which continues to flourish.
Since she was 14 years old, Lee has been working in a variety of food establishments including cafés, bistros, pizza shops and restaurants. She decided to enrol into culinary schooling where she learned valuable techniques and experience, as she knew that she had found true calling; creating delicious food, and sharing that passion with everyone around her.
Following several positions within restaurant kitchens of Montreal, for three years prior to opening Sweet Lee’s Rustic Bakery, Lee was head chef at Les Gourmets Pressés (bistro/caterer). She had the chance to experiment with her own creations, bringing unique and delicious flavour combinations to St-Henri locals, with very positive results. These experiences allowed Lee to create a wide variety of distinctive recipes and dishes, with emphasis on hearty, nourishing and flavour-rich comfort foods.
Since 2010, has been the head chef and baker/owner at Sweet Lee’s, continuously expanding and tweaking the menu to please customers with a multitude of her sweet and savoury meals and treats.
Greg is a man with many talents and skills, which have been a huge asset in creating and running Sweet Lee’s. After determining that he was destined for a career in a creative, hands-on environment, he chose to let studies in Mechanical Engineering fall for something he was more even passionate about; wood.
While attending Rosemont Technology Center for wood-working, he managed the kitchen and front of house of a busy restaurant for several years, throughout his studies. Just months after completing this program, he opened a custom woodworking shop, Korona Woodwork and Design.
While working on a wide variety of custom projects for clients in his shop, his passion for food and desire to see his sister succeed in her own dreams of owning a bakery, led him to join forces and create Sweet Lee’s.
Having building and design knowledge and the drive to create unique work, Greg had the opportunity to showcase his skills by designing and building both of the bakery’s locales from the ground up. Greg is now responsible for many aspects of the business, from managing employees, product development, building relationships with commercial clients, to helping in the kitchen and serving hungry customers. He always aims to please!
Shorlty after retiring from her previous career of 36 years in several positions at Pratt & Whitney Canada, Claudia joined her children, Lee and Greg to become a vital part of the management team at Sweet Lee’s.
Claudia grew up within the restaurant industry, as she helped for years working at her father’s restaurant “ La Chandelle” in Longueuil, followed by a lifetime of experiences allowing her to bring very useful knowledge to helping manage the bakery.
She now enjoys supporting Lee and Greg in many daily aspects of the business. She’s an all-around star and multitasker, whether she is serving customers, managing the service team or helping out in the kitchen or office.
